Composite materials are 2 or more complimentary materials put together. Can be hard to recycle like plastics and lamenents. How they can be used with electronics depends on your reason for use. Do you want them to work together or are you trying to fuse the two. Plastic is a bad conductor of electricity. If your plan is to use it for that matter you would have to add a third(conductive) element to the material. What role will the composite material play? What role will the electronics play? Do either one need to use the properties of the other? These are questions you have to ask yourself (and make clear here) in order to better come up with a solution.
